Your course can contain "theory" if you want. Whichever way you choose to learn, these are informal courses, focusing on real road situations.
Regular briefings are given throughout the course to let you know how you are progressing
There is a comprehensive debriefing at the end of the course and you can select the content of this debrief, either verbal or written feedback detailing your achievements and progress or an assessment against "Roadcraft" requirements.
The key to being a skilled rider is to be able to control your bike in whatever situations you find yourself.
